Here's how I would have ended the series:
Jon Snow confronts Dany at the throne.
Epic fight: Greyworm vs. Snow.
Snow wins the fight.
Dany tells dragon to blast Snow.
Dragon breathes fire on Snow.... throne melts... but Snow survives cuz he's part Targarian or whatever.
Then the kiss/stab scene as per original ending (keep that scene if you want)
Jon Snow breaks up the 7 kingdoms... (no throne, no king, perfecto!) and each region rules their own business from now on.
Jon Snow remains king of the north which now includes the freefolk.
meanwhile...
Dwarf finds Circe's body but baby is alive.
Dwarf takes baby and decides to try to raise it properly. ("A Laninster always pays his debts")
epilogue...
Baby goes thru life thinking he's son of a pirate but eventually learns its true ew origins... then decides to try rule the 7 kingdoms again... launching the next series 10 years from now.
